My vegan adventure!

Hey everyone!

So if you know me, I’m sure you all know that I recently began my very own vegan journey!!  In late march, I decided I wanted a change in my life.  I started by cutting all meat (except fish) out of my diet.  I wasn’t quite ready to cut out fish because I was too big a fan of sushi! I made it through the whole summer without eating a bite of meat, other than fish, and it was such a new experience for me.  Then, in early August, I decided I was going to cut fish out of my diet as well.  I thought this would be a good time to make that switch, because that is around the time that I moved back to Arizona for school.  I thought this would be a difficult transition, but it ended up being easier than expected.  I live in my sorority house and our chef is very helpful with dietary restrictions, so he definitely makes it easier.  After a while, I thought it would be a good idea to cut out all animal products.  So as of this past week, I AM VEGAN!!!I am so happy to announce this and I highly recommend making the switch.  Every now and then, its difficult, especially with how much I love chocolate, but its an uplifting experience.  I’m hoping to continue my journey for a long period of time while I try out new recipes.

In the beginning of all of this, I decided to change my diet, simply so I could prove to myself that I could do something like this.  After watching multiple documentaries and talking to other vegans and I learned a lot.  Eventually, my reasons began to evolve and I couldn’t be happier with the choices I’ve made.

I can say that I sure do miss sushi a lot, and cucumber rolls don’t quite taste the same, but it’s something I’m okay with letting go.
